Bacon & Cheese Frittata

1 1/2 cups sweet potato (diced)
5 slices bacon
1 cup onion (diced)
1 tbsp rosemary
1/3 cup cheddar cheese
Slice sweet potato and put slices into a microwavable bowl.
Add a little bit of water in the bowl.
Cover the bowl with a paper towel and place in microwave for around 4 minutes or until soft.
Let cool and remove any remaining water.
In an oven proof skillet on medium heat, add and cook bacon until crispy.
Once crispy, remove bacon onto a plate with a paper towel.
In the same skillet, add a little bit of olive oil, onion, rosemary, and sweet potato and cook until soft and slightly brown.
Once done, remove skillet from heat.
In a small bowl, add and mix eggs and cheese.
Add egg mixture to the skillet with onions and sweet potato.
Add crispy bacon bits on top of skillet, egg mixture.
Set the oven to broil and bake skillet mixture for around 4 minutes or until eggs are set but be careful not to burn the eggs!
Once done, be careful removing the skillet because the handle will be hot and evenly divide recipe into 4 servings to come as close as possible to the given macros.
