  • 1/3 cup coconut milk

  • 1/4 cup nutritional yeast

  • 12 slices bacon

  • 2 large sweet potatoes (chopped)

  • 1 large onion

  • 1/2 tsp garlic powder

  • 12 eggs

  1. Preheat oven to 425º F.

  2. Grease baking dish with coconut oil.

  3. In a skillet, cook bacon over medium heat until crisp.

  4. Once crispy, remove from skillet and set aside on paper towels. Chop once cool.

  5. Add chopped sweet potato at the bottom of the baking dish.

  6. Bake sweet potatoes for around 25-30 minutes or until soft.

  7. Grab skillet and cook onions over medium heat until brown, which will be around 20 minutes.

  8. In a bowl, mix the eggs, coconut milk, nutritional yeast, and garlic powder.

  9. Once sweet potatoes are done, reduce oven heat to 400º F.

  10. Add and mix the onions, bacon, and egg mixture to the sweet potatoes in the baking dish.

  11. Bake for around 20 minutes or until eggs are set and a toothpick comes out clean.

  12. Cut casserole into 8 even squares to come as close as possible to the given macros.
