  • 2 1/2 cups rotisserie chicken (shredded)

  • 1/2 cup cheddar cheese (shredded)

  • 4 sweet potatoes

  • 1 tbsp olive oil

  • 6 tbsp primal kitchen classic bbq sauce

  • 1/2 red onion (diced)

  1. Preheat oven to 375º F.

  2. On a baking sheet, place sweet potatoes and toss in olive oil.

  3. Bake for around 1 hour or until soft.

  4. Once done, let cool.

  5. Once slightly cool, cut an opening long ways in each sweet potato.

  6. In a bowl, add and mix together chicken, bbq sauce, onion, and cheddar cheese.

  7. Evenly divide mixture and stuff each sweet potato.

  8. Bake for another 20 minutes or until your desired consistency.

  9. Eating 1 baked sweet potato will come as close as possible to the given macros.
