BBQ Sweet Potato

2 1/2 cups rotisserie chicken (shredded)
1/2 cup cheddar cheese (shredded)
4 sweet potatoes
1 tbsp olive oil
6 tbsp primal kitchen classic bbq sauce
1/2 red onion (diced)
Preheat oven to 375º F.
On a baking sheet, place sweet potatoes and toss in olive oil.
Bake for around 1 hour or until soft.
Once done, let cool.
Once slightly cool, cut an opening long ways in each sweet potato.
In a bowl, add and mix together chicken, bbq sauce, onion, and cheddar cheese.
Evenly divide mixture and stuff each sweet potato.
Bake for another 20 minutes or until your desired consistency.
Eating 1 baked sweet potato will come as close as possible to the given macros.
