  • 3/4 lb ground beef

  • 1 onion (diced)

  • 1 red bell pepper (diced)

  • 4 garlic cloves (minced)

  • 2 tsp paprika

  • 6 eggs

  • 1 tsp cumin

  • 1/4 tsp chili powder

  • 28 oz can tomatoes

  1. In a skillet over medium heat, add a little olive oil and ground beef.

  2. Chop up and cook until beef is cooked through and not red.

  3. Once done, set beef aside in a bowl.

  4. In the same skillet over medium heat, add and mix together a little more olive oil, red bell pepper, and onion.

  5. Once the diced onion is soft, add and mix in garlic, spices, and beef.

  6. Continue to cook for a couple minutes until everything is mixed.

  7. Once mixed, add in can of tomatoes and continue to cook until tomatoes are broken down.

  8. Carefully, make 6 small holes in the mixture and crack one egg in each hole.

  9. Cover the skillet and continue to cook until eggs are completely cooked through or to your desired consistency.

  10. Evenly divide recipe into 6 servings where each serving contains one egg to come as close as possible to the given macros.
