1 cup plain greek yogurt
1 cup old fashioned rolled oats (gluten-free)
1 tablespoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1 small sweet potato (baked, peeled, & chopped)
1 1/2 cup blueberries
Preheat oven to 350º F.
Add the oats to a blender or food processor and blend for about 5-10 seconds.
Add and blend the sweet potato, yogurt, eggs, protein powder, cinnamon, baking powder, and baking soda.
Add and stir in the blueberries.
Grease a 12 cup muffin pan.
Add batter into each cup.
Bake for around 20 minutes or until a toothpick comes out clean.
Let cool and eat immediately or pack up 3 muffins per meal to come close to the given macros.
