  • 1 cup plain greek yogurt

  • 2 eggs

  • 2 scoops level-1 vanilla protein powder

  • 1 cup old fashioned rolled oats (gluten-free)

  • 1 tablespoon cinnamon

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 small sweet potato (baked, peeled, & chopped)

  • 1 1/2 cup blueberries

  1. Preheat oven to 350º F.

  2. Add the oats to a blender or food processor and blend for about 5-10 seconds.

  3. Add and blend the sweet potato, yogurt, eggs, protein powder, cinnamon, baking powder, and baking soda.

  4. Add and stir in the blueberries.

  5. Grease a 12 cup muffin pan.

  6. Add batter into each cup.

  7. Bake for around 20 minutes or until a toothpick comes out clean.

  8. Let cool and eat immediately or pack up 3 muffins per meal to come close to the given macros.
