2 tbsp extra virgin olive oil
4 garlic cloves (minced)
1/4 cup balsamic vinegar
4 tomatoes (diced)
4 chicken breasts
1/2 cup basil
Cut fat off each chicken breast and let marinade in balsamic.
Add and mix tomatoes, basil, olive oil, and garlic in a bowl.
Set aside covered for 30 minutes.
Turn on the saute function on the Instant Pot.
Add a little bit of olive oil.
Add chicken breasts and cook for around 10 minutes each side while covered.
Once chicken is done and not pink, remove from Instant Pot.
Separate each chicken breast and top evenly with the tomato mixture to come as close as possible to the given macros. You can also make into a salad by mixing in some spinach.
