5 slices bacon
1 cup cheddar cheese
1 head cauliflower (diced)
1 red bell pepper (diced)
1 onion (diced)
1 garlic clove (minced)
1 tbsp chives
In a skillet over medium heat, add bacon and cook until crispy.
Once done, remove from heat, let cool on paper towels, and dice.
In the same skillet, add diced onion, bell pepper, and cauliflower.
Cook until soft and tender.
Add a little bit of water to skillet and cover.
Cook for a few more minutes or until all water is gone and has turned into steam.
Once water is gone, remove cover and add garlic.
Add eggs on top of mixture in four seperate corners.
Add bacon, chives, and cheese on top of everything and cover.
Continue to cook until eggs are cooked to your desired consistency.
Evenly divide recipe into 4 servings where an egg is included in each serving to come as close as possible to the given macros.
