  • 1 lb ground beef

  • 1/2 onion (diced)

  • 1 bell pepper (diced)

  • 2 zucchini (diced)

  • 2 tbsp taco seasoning

  • 14 oz can diced tomatoes

  • 6 oz can tomato paste

  • 2 3/4 cup beef broth

  • 1/2 cup frozen corn

  • 7 oz. black beans

  • 1 1/2 cup cheddar cheese (shredded)

  1. Preheat oven to 375º F.

  2. In a skillet over medium heat, add in beef, onion, and bell pepper.

  3. Cook for around 6-10 minutes or until beef is not pink.

  4. Add and mix in zucchini and taco seasoning.

  5. Continue to cook for a few minutes or until zucchini is soft.

  6. In a baking dish, add in the beef mixture from the skillet.

  7. Add and mix in diced tomatoes, tomato paste, beef broth, black beans, corn, and cheese.

  8. Cover baking dish and bake for around 20-30 minutes but be careful to not over bake.

  9. Once done and cool, evenly divide casserole into 10 servings to come as close as possible to the given macros.
