SERVINGS PER RECIPE

2 lb. boneless skinless chicken breast (cubed)
1 onion (minced)
1 green bell pepper (minced)
2 cups chicken broth
1 can roasted tomatoes
2 garlic cloves (minced)
1 tablespoon chili powder
1 teaspoon cumin
2 tablespoons lime juice
1 can black beans (drained & rinsed)
Add and mix all ingredients to a slow cooker and cook on low for 8 hours.
Remove chicken from slow cooker and shred with 2 forks or a hand/stand mixer.
Add and mix shredded chicken back into slow cooker mixture.
Leave mixture on very low heat to maintain warmth before eating.
Let cool and eat immediately or pack up 2 cups per meal in order to come close to the given macros.
