Chicken Ingredients

  • 1 tsp garlic powder

  • 1 tsp cumin

  • 1 1/2 tsp chili powder

  • 1 1/2 lbs boneless skinless chicken thighs

  • juice of 2 limes

  • 1 tbsp coconut oil

  • 1 tsp onion powder

  • chipotle powder (pinch)

Cauliflower Rice Ingredients

  • 1 jalapeño pepper (minced)

  • 3/4 tsp onion powder

  • 1 lb. cauliflower rice

  • 1 tbsp coconut oil

  • chipotle powder (pinch)

  • 1-2 tbsp fresh lime juice

  • 3/4 tsp garlic powder

Pepper & Onion Ingredients

Guacamole Ingredients

  • 2 clove garlic (minced)

  • 2 avocados

  • 2 tbsp fresh lime juice

  • 1/4 cup onion (minced)

  • 1 jalapeno pepper (minced)

Cauliflower Rice Directions

  1. Heat a large skillet over medium heat and add oil.

  2. Add and stir the riced cauliflower.

  3. Cover the skillet and cook for about 2-3 minutes.

  4. Add and stir the jalapeño, seasonings, and lime juice.

  5. Cook and stir another minute or two uncovered until you have your desired liking.

  6. Remove from heat and set aside.

Chicken, Pepper, & Onion Directions

  1. Cut chicken thighs into cubes.

  2. Season all over with all seasonings, except the lime.

  3. Heat a large skillet over medium high heat and add 1 tbsp cooking oil.

  4. Add and stir chicken and cook for 7 mins or until cooked through and no longer pink.

  5. Lower heat a bit and add the lime juice while stirring.

  6. Continue to cook another 2-3 minutes, then remove from heat and place in a bowl.

  7. Keep the heat on medium and add another tbsp oil to the skillet.

  8. Add and stir peppers and onions.

  9. Continue to cook while stirring occasionally for about 5 minutes or until softened.

  10. Remove from heat.

Guacamole Directions

  1. Mash and mix the avocado with the rest of the ingredients while adjusting seasonings to taste.

  2. Mix everything evenly into 6 bowls or containers and top with guacamole to come close to given macros.
