Chicken Ropa Vieja

1 tbsp oregano
2 medium green bell pepper
2 medium red bell pepper
32 oz. can diced tomatoes
2 tsp cumin
0.25 tsp red pepper flakes
2 medium yellow onion
3 lb. chicken breast (boneless skinless)
8 cloves garlic
6 tbsp tomato paste
Trim the chicken pieces of excess fat.
Place the chicken pieces in the bottom of the slow cooker.
Add minced garlic to slow cooker.
Add the oregano, cumin, red pepper flakes, and pepper over the chicken.
Slice the onion, green bell pepper, and red bell pepper into strips.
Place the onion and bell peppers on top of the chicken in the slow cooker.
Add the can of diced tomatoes and tomato paste to the slow cooker.
Place the lid on the slow cooker and cook on high for four hours.
After four hours, remove the lid and stir.
Shred the chicken with two forks or use hand mixer.
Let cool, eat immediately, or pack up 4 oz. of chicken with vegetables evenly divided into 12 servings to come close to the given macros.
