Chicken Sausage Hash

1 tablespoons olive oil
1 tablespoon garlic (minced)
1/2 large sweet potato
1 red pepper (diced)
1/2 yellow onion (diced)
4 Applegate chicken & apple sausages
4 cups kale
2 tablespoons balsamic vinegar
Heat 1 tablespoon of olive oil in a skillet on medium heat.
Grate sweet potato using a medium grate.
Add grated sweet potato, onion, garlic, red pepper, and sliced chicken sausages to the skillet.
Cook for around 8 minutes or until onions are soft.
Add and mix in kale.
Continue to cook for 1-3 minutes or until desired consistency.
Add and mix in 2 tablespoons of balsamic vinegar.
In a separate skillet or pan, add a little bit of olive oil.
Crack eggs and cook until the whites have set which will be around 3-5 minutes.
Evenly divide hash into 4 servings. Add one egg on top of each serving. Let cool and eat immediately or pack up 1/4 of recipe to come close to the given macros.
