  • 1 tablespoons olive oil

  • 1 tablespoon garlic (minced)

  • 1/2 large sweet potato

  • 1 red pepper (diced)

  • 1/2 yellow onion (diced)

  • 4 Applegate chicken & apple sausages

  • 4 cups kale

  • 2 tablespoons balsamic vinegar

  • 4 eggs

  1. Heat 1 tablespoon of olive oil in a skillet on medium heat.

  2. Grate sweet potato using a medium grate.

  3. Add grated sweet potato, onion, garlic, red pepper, and sliced chicken sausages to the skillet.

  4. Cook for around 8 minutes or until onions are soft.

  5. Add and mix in kale.

  6. Continue to cook for 1-3 minutes or until desired consistency.

  7. Add and mix in 2 tablespoons of balsamic vinegar.

  8. In a separate skillet or pan, add a little bit of olive oil.

  9. Crack eggs and cook until the whites have set which will be around 3-5 minutes.

  10. Evenly divide hash into 4 servings. Add one egg on top of each serving. Let cool and eat immediately or pack up 1/4 of recipe to come close to the given macros.
