1 1/2 lb rotisserie chicken (shredded)
3 tbsp coconut aminos
2.5 tsp arrowroot powder
1/2 tsp baking soda
2 tbsp olive oil
1/2 tsp toasted sesame oil
1/2 tsp balsamic vinegar
2 tbsp chicken stock
4 large garlic (minced)
1 tbsp ginger (chopped)
14 oz. broccoli florets
In a bowl, add and mix together shredded chicken, 1 tbsp coconut aminos, 1.5 tsp arrowroot powder, 1/2 tsp baking soda, and 2 tbsp olive oil.
In a separate bowl, add and mix together 2 tbsp coconut aminos, 1/2 tsp sesame oil, 1/2 tsp balsamic vinegar, 2 tbsp chicken stock, and 1 tsp arrowroot powder to form a sauce.
Heat broccoli florets in microwave for around 2 minutes and set aside.
In a large skillet over medium heat with a little bit of olive oil, add in the chicken mixture.
Cook for a few minutes until slightly golden.
Once done, set aside on another plate.
In the same skillet over medium heat, add in garlic and ginger while stirring frequently.
Add and mix in chicken and broccoli.
Add and mix sauce for around 30 sec. and remove from heat.
Evenly divide recipe into 8 servings to come as close as possible to the given macros.
