Chicken Ingredients
1/4 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon garlic powder
1lb. boneless skinless chicken breast
2 tablespoons extra virgin olive oil
1 teaspoon chili powder
Cauliflower Rice Ingredients
1 teaspoon paprika
1 tablespoon tomato paste
1/2 teaspoon cumin
1 12 oz. bag cauliflower rice
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne powder
Chipotle Ingredients
1 teaspoon chili powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/3 cup primal kitchen mayo
1 teaspoon garlic powder
1/4 teaspoon ground cumin
Pico Ingredients
2 tablespoons cilantro (chopped)
1 jalapeño (diced)
3 ripe tomatos (diced)
1 red onion (diced)
Pepper & Onion Ingredients
1 bell pepper (diced)
extra virgin olive oil
1 onion (diced)
Place chicken in a bowl and add the chicken ingredients until completely covered.
Grill chicken for about 5-6 minutes on each side or until fully cooked and not pink.
Heat a medium skillet with 1 tablespoon olive oil.
Add and mix cauliflower rice and the rest of the ingredients under "cauliflower rice."
Cook for 5-8 minutes, until the cauliflower is completely cooked.
Once chicken is completely cooked on the grill, let cool and cut into cubes.
In a separate medium skillet, heat 1 tablespoon extra virgin olive oil.
Add and cook onions and peppers for about 8 minutes until veggies are caramelized.
Add and mix pico ingredients in a separate mixing bowl.
Add and mix chipotle ingredients in a separate mixing bowl.
To assemble your power bowl, evenly divide all ingredients (chicken, chipotle, pico, & cauliflower rice) into 4 separate containers or bowls to come close to the given macros.
