Chicken Ingredients

  • 1/4 teaspoon cayenne pepper

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1lb. boneless skinless chicken breast

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon chili powder

Cauliflower Rice Ingredients

  • 1 teaspoon paprika

  • 1 tablespoon tomato paste

  • 1/2 teaspoon cumin

  • 1 12 oz. bag cauliflower rice

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon cayenne powder

Chipotle Ingredients

  • 1 teaspoon chili powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon paprika

  • 1/3 cup primal kitchen mayo

  • 1 teaspoon garlic powder

  • 1/4 teaspoon ground cumin

Pico Ingredients

  • 2 tablespoons cilantro (chopped)

  • 1 jalapeño (diced)

  • 3 ripe tomatos (diced)

  • 1 red onion (diced)

Pepper & Onion Ingredients

  • 1 bell pepper (diced)

  • extra virgin olive oil

  • 1 onion (diced)

  1. Place chicken in a bowl and add the chicken ingredients until completely covered.

  2. Grill chicken for about 5-6 minutes on each side or until fully cooked and not pink.

  3. Heat a medium skillet with 1 tablespoon olive oil.

  4. Add and mix cauliflower rice and the rest of the ingredients under "cauliflower rice."

  5. Cook for 5-8 minutes, until the cauliflower is completely cooked.

  6. Once chicken is completely cooked on the grill, let cool and cut into cubes.

  7. In a separate medium skillet, heat 1 tablespoon extra virgin olive oil.

  8. Add and cook onions and peppers for about 8 minutes until veggies are caramelized.

  9. Add and mix pico ingredients in a separate mixing bowl.

  10. Add and mix chipotle ingredients in a separate mixing bowl.

  11. To assemble your power bowl, evenly divide all ingredients (chicken, chipotle, pico, & cauliflower rice) into 4 separate containers or bowls to come close to the given macros.
