3 cups celery (chopped)
1/2 cup beef broth
2 sprigs rosemary
3 carrots (chopped)
1 white onion (peeled)
1 teaspoon olive oil
2 lb. chuck roast
1 lb. white potatoes
Add olive oil in a skillet over medium heat.
Add the chuck roast and cook for around 3-5 min. or until slightly brown.
Add potatoes, celery, carrots, onion, and broth to a slow-cooker.
Add the chuck roast to the slow-cooker.
Add and mix the rosemary and beef seasoning to the slow-cooker.
Turn slow-cooker on low and cook for around 5-7 hours or until vegetables are soft and roast falls apart.
Let cool and eat immediately or pack up 4 oz. of roast and evenly divided vegetables into 8 servings to come as close as possible to the given macros.
