Cinnamon Pumpkin Seeds

1/2 tsp pure vanilla extract
3 cups pumpkin seeds
3 tbsp butter
2 tsp ground cinnamon
4 tbsp granulated sugar
Preheat oven to 325°F.
Use a non-stick spray to grease a baking pan.
In a bowl, mix together sugar and cinnamon.
Melt butter in a large microwavable bowl.
Add and stir vanilla into the butter.
Add and mix pumpkin seeds into the butter mixture until well coated.
Add and mix cinnamon mixture with pumpkin seeds until well coated.
Evenly spread pumpkin seeds on baking pan.
Bake for around 25 minutes while stirring until seeds are slightly brown and not as soft.
Let cool and eat immediately or pack up 1/2 cup to come close to the given macros.
