2 1/2 cups rotisserie chicken (shredded)
1 cup mozzarella (shredded)
3/4 cup chicken broth (low sodium)
1 cup heavy cream
1 onion (diced)
1 tbsp olive oil
2 cloves garlic (minced)
10 oz. baby spinach
In a skillet over medium heat, add 1 tbsp of olive oil, onion, and garlic.
Cook for around 5 minutes or until soft.
Once soft, add spinach and continue to cook for an addditional few minutes or until wilted.
Once wilted, add heavy cream and chicken broth.
Continue to cook for a few minutes.
Add and stir in mozzarella for an additional couple minutes.
Add in chicken and continue to cook for 3-6 minutes
Evenly divide recipe into 5 servings to come as close as possible to the given macros.
