6 Egg Muffins

1 cup red pepper (diced)
1 cup green pepper (diced)
1 cup yellow onion (diced)
1 1/2 cups spinach
1 cup mushrooms (diced)
4 whole eggs
4 egg whites
2 cloves garlic (minced)
Preheat oven to 350º F.
In a skillet over medium heat, add a little bit of olive oil, red pepper, green pepper, and onion.
Cook for around 5 minutes or until soft.
Once soft, add and mix in mushrooms, garlic, and spinach.
Cook for an additional couple minutes and remove from heat.
In a bowl, add and mix together the whole eggs and egg whites.
Once done, add and mix in all the vegetables from the skillet.
Grease a muffin pan with 12 slots.
Once greased, evenly pour egg mixture into each slot.
Bake for around 12-15 minutes or until eggs are completely cooked through.
Eating 6 egg muffins will come as close as possible to the given macros.
