  • 1 cup red pepper (diced)

  • 1 cup green pepper (diced)

  • 1 cup yellow onion (diced)

  • 1 1/2 cups spinach

  • 1 cup mushrooms (diced)

  • 4 whole eggs

  • 4 egg whites

  • 2 cloves garlic (minced)

  1. Preheat oven to 350º F.

  2. In a skillet over medium heat, add a little bit of olive oil, red pepper, green pepper, and onion.

  3. Cook for around 5 minutes or until soft.

  4. Once soft, add and mix in mushrooms, garlic, and spinach.

  5. Cook for an additional couple minutes and remove from heat.

  6. In a bowl, add and mix together the whole eggs and egg whites.

  7. Once done, add and mix in all the vegetables from the skillet.

  8. Grease a muffin pan with 12 slots.

  9. Once greased, evenly pour egg mixture into each slot.

  10. Bake for around 12-15 minutes or until eggs are completely cooked through.

  11. Eating 6 egg muffins will come as close as possible to the given macros.
