  • 1/4 cup cottage cheese

  • 1/2 cup of parmesan cheese

  • 2 thick slices of cooked bacon (sugar free)

  • black pepper

  • 5 eggs

  1. Make sure to cook the slices of bacon before making the egg bites. 

  2. Pre-heat oven to 300º F. 

  3. Place a baking dish that is filled with 1 inch of water on the bottom rack to help egg bites cook evenly.

  4. Add and blend the eggs, cheese, cottage cheese, and pepper for 10 - 20 seconds.

  5. Spray a muffin tin with a little non-stick spray and fill the tins almost all the way to the top with the egg mixture. Take note that this recipe only makes 6 muffins, meaning a 6 muffin pan would be ideal. 

  6. Divide the chopped bacon equally among all of the muffin tins and bake in the oven for 20 - 30 minutes, or until the center of the egg bites are just set and not liquid.

  7. Remove from oven and let cool.

  8. Pack up 2 egg bites to come close to the given macros.
