Hash Brown Casserole

4 cups frozen hash brown potatoes (cubed or shredded)
1 sweet onion (diced)
1-1/2 cups cottage cheese
2 cups cheddar cheese (shredded)
1 pound bacon (diced)
Preheat oven to 350° F.
In a skillet, cook bacon and onion over medium heat until bacon is crisp.
In another bowl, combine and stir remaining ingredients.
Add and stir in bacon and onions.
Transfer to a non-stick 13x9in. baking dish.
Bake for around 35 minutes or when dish is set with no remaining liquid.
Evenly divide casserole into 12 servings or squares. Let cool and eat immediately or pack up 1 serving in order to come close to the given macros.
