  • 4 tbsp orange zest

  • 1/3 cup coconut aminos

  • 1/3 cup rice vinegar

  • 1 tsp sesame oil

  • 3 tbsp fresh ginger (minced)

  • 4 cloves garlic (minced)

  • 1/2 cup orange juice (no added sugar)

  • 2 tbsp arrowroot powder

  • 2 lb. chicken breast

  • 1 tsp olive oil

  • 3/4 cup wild mixed rice

  • 3 cups bone broth

  1. In a bowl, cut fat off chicken breasts then cut into cubes.

  2. Set pressure cooker to saute and add olive oil, sesame oil, and chicken.

  3. Cook and stir for around 4 minutes.

  4. Add and mix in more olive oil, ginger, and garlic.

  5. Continue cooking for another couple of minutes then turn off pressure cooker.

  6. Add and mix in a little bit of orange juice while preventing anything from sticking to the bottom.

  7. Add and mix in all the ingredients except arrowroot, wild mixed rice, and bone broth.

  8. Set pressure cooker to manual pressure for around 6 minutes.

  9. Once done, use the quick release to release the pressure.

  10. Turn off manual pressure and set to saute.

  11. In a separate bowl, mix arrowroot and a little bit of water.

  12. Add and mix in arrowroot mixture to chicken.

  13. Continue to cook and stir on saute for around 4-6 minutes.

  14. Once done, turn off pressure cooker.

  15. For the wild mixed rice, add the rice and bone broth into a pan with a lid.

  16. Cook on high heat until boiling, then reduce heat to a simmer for around 30 minutes or until rice burst open.

  17. Once done, turn heat off, let cool, and remove any excess liquid.

  18. Evenly divide chicken and rice into 8 servings to come as close as possible to the given macros.
