2 cups pineapple (diced)
1 red onion (diced)
1 lb shrimp
2 tbsp olive oil
1/2 cup cilantro
1 1/2 cup green cabbage slaw mix
2 tsp cumin
2 tsp chili powder
2 cloves garlic (minced)
Preheat oven to 425º F.
In a bowl, add and mix shrimp, 1 tbsp olive oil, garlic, chili powder, and cumin.
Set aside and let sit for a few minutes.
In a seperate bowl, add and mix cabbage, cilantro, and 1 tbsp olive oil.
On a sheet pan, add onions and a tiny bit of olive oil in a layer.
Next, and pineapple and a tiny bit of olive oil in a seperate layer.
Last, add shrimp mixture in another seperate layer which should fill the remaining bit of the sheet pan.
Bake for around 10-12 minutes or until shrimp is completely cooked through.
Once done, evenly divide shrimp, onion, pineapple, and slaw mixture into 4 servings to come as close as possible to the given macros.
