  • 2 cups pineapple (diced)

  • 1 red onion (diced)

  • 1 lb shrimp

  • 2 tbsp olive oil

  • 1/2 cup cilantro

  • 1 1/2 cup green cabbage slaw mix

  • 2 tsp cumin

  • 2 tsp chili powder

  • 2 cloves garlic (minced)

  1. Preheat oven to 425º F.

  2. In a bowl, add and mix shrimp, 1 tbsp olive oil, garlic, chili powder, and cumin.

  3. Set aside and let sit for a few minutes.

  4. In a seperate bowl, add and mix cabbage, cilantro, and 1 tbsp olive oil.

  5. On a sheet pan, add onions and a tiny bit of olive oil in a layer.

  6. Next, and pineapple and a tiny bit of olive oil in a seperate layer.

  7. Last, add shrimp mixture in another seperate layer which should fill the remaining bit of the sheet pan.

  8. Bake for around 10-12 minutes or until shrimp is completely cooked through.

  9. Once done, evenly divide shrimp, onion, pineapple, and slaw mixture into 4 servings to come as close as possible to the given macros.
