  • 1 lb italian ground turkey

  • 1 spaghetti squash (4 cups)

  • 1 tbsp olive oil

  • 1 onion (diced)

  • 1 bell pepper (diced)

  • 3 cups crimini mushrooms (diced)

  • 1/2 cup black olives (sliced & optional)

  • 15 oz. pizza sauce (low sodium)

  1. Cut spaghetti squash in half, remove all seeds, and place face down onto a plate.

  2. Place spaghetti squash in the microwave for around 10 min. or until soft enough to fork into spaghetti strands. Be careful not to burn yourself because squash will be extremely hot!

  3. In a skillet over medium heat, add olive oil and ground turkey.

  4. Cook for around 8 minutes or until brown and cooked through while breaking it up throughout the 8 minutes.

  5. Once cooked, remove turkey and set aside in a bowl.

  6. In the same skillet, add diced onion and bell pepper. 

  7. Cook for another 8 minutes or until soft.

  8. Once done, remove from heat and add into the same bowl with the turkey.

  9. In the same skillet, add mushrooms and cook until soft.

  10. Once soft, add turkey, onion, and peppers back into the skillet with the mushrooms.

  11. Add spaghetti squash strands, pizza sauce, and optional olives into the skillet.

  12. Mix everything together and let cook for an additonal few minutes before removing from heat.

  13. Evenlty divide mixture into 6 bowls to come as close as possible to the given macros.
