Popcorn Chicken

  • 1.5 lb chicken breasts

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 2 1/2 cups pork rinds (crushed)

  • 4 eggs

  • 1/4 cup coconut flour or almond flour

  • 1/4 tsp black pepper

Sweet Potato Fries

  • 2 sweet potatoes

  • 1 1/2 tbsp olive oil

  • 1 1/2 tsp garlic powder

  • 1 1/2 tsp paprika

  • 1 1/2 tsp oregano

  • 1 tsp thyme

  • 1/4 tsp black pepper

  • 1/4 tsp cayenne pepper

Popcorn Chicken

  1. Preheat oven to 400º F.

  2. In a bowl, mix coconut flour and black pepper.

  3. In a seperate bowl, mix eggs.

  4. In a third bowl, mix crushed prok rinds, onion powder, garlic powder, and paprika.

  5. Cut chicken into popcorn sized bites.

  6. Individually, start to cover the chicken with the coconut flour mixture until completely covered.

  7. Next, cover each chicken bite with the egg mixture.

  8. Last, completely cover each bite with the crushed pork rind mixture.

  9. Once done, transfer the chicken to a baking sheet.

  10. Bake for around 10-15 minutes or until completely cooked through and feel free to carefully flip if not cooking on bottom.

  11. Evenly divide recipe into 8 servings to come as close as possible to the given macros.

Sweet Potato Fries

  1. Preheat oven to 425º F.

  2. Wash and cut sweet potatoes into thin fries.

  3. Add sweet potatoe fries to baking sheet.

  4. Toss fries with olive oil and seasonings.

  5. Try to not layer fries to allow for even baking and crispiness.

  6. Bake for around 10-20 minutes or until your desired crispiness.

  7. Evenly divide recipe into 8 servings to come as close as possible to the given macros.
