  • 1 large carrot (chopped)

  • 1 tablespoon tomato paste

  • 1 1/2 cups beef broth

  • 1 large head cauliflower

  • 1 tablespoon olive oil

  • 1/2 teaspoon ground nutmeg

  • 1 pound ground beef

  • 1 tablespoon Worcestershire sauce

  • 1/4 cup parmesan cheese (shredded)

  • 1 1/2 cups cremini mushrooms (chopped)

  • 1 medium onion (chopped)

  1. Add cauliflower to pot of boiling water and boil for around 10-12 minutes or until soft.

  2. Drain and add into a food processor.

  3. Add olive oil and nutmeg into food processor.

  4. Process until smooth and set aside.

  5. Preheat oven to 400°F.

  6. In a skillet over medium to high heat, add ground beef and Worcestershire sauce.

  7. Cook for around 5 minutes or until brown and set aside.

  8. In the same skillet, add olive oil, mushrooms, onions, carrots, and cook for around 6 minutes or until soft.

  9. Add and mix in tomato paste.

  10. After a couple minutes of mixing, add in broth and ground beef while reducing heat slightly for an additional 3-5 minutes.

  11. Add ground beef mixture into a baking dish.

  12. Add cauliflower mixture on top with parmesan cheese.

  13. Bake for around 15-20 minutes.

  14. Once cool, evenly divide recipe into 4 servings to come as close as possible to the given macros.
