1 large carrot (chopped)
1 tablespoon tomato paste
1 1/2 cups beef broth
1 large head cauliflower
1 tablespoon olive oil
1/2 teaspoon ground nutmeg
1 pound ground beef
1 tablespoon Worcestershire sauce
1/4 cup parmesan cheese (shredded)
1 1/2 cups cremini mushrooms (chopped)
1 medium onion (chopped)
Add cauliflower to pot of boiling water and boil for around 10-12 minutes or until soft.
Drain and add into a food processor.
Add olive oil and nutmeg into food processor.
Process until smooth and set aside.
Preheat oven to 400°F.
In a skillet over medium to high heat, add ground beef and Worcestershire sauce.
Cook for around 5 minutes or until brown and set aside.
In the same skillet, add olive oil, mushrooms, onions, carrots, and cook for around 6 minutes or until soft.
Add and mix in tomato paste.
After a couple minutes of mixing, add in broth and ground beef while reducing heat slightly for an additional 3-5 minutes.
Add ground beef mixture into a baking dish.
Add cauliflower mixture on top with parmesan cheese.
Bake for around 15-20 minutes.
Once cool, evenly divide recipe into 4 servings to come as close as possible to the given macros.
