Shrimp Fried Rice

1 lb shrimp
2 tbsp liquid aminos
2 garlic cloves (minced)
3 tbsp olive oil
2 carrots (diced)
1 red pepper (diced)
3 cups frozen cauliflower rice (defrosted)
1 cup frozen peas (defrosted)
2 tsp sesame oil
In a bowl, add and mix liquid aminos, sesame oil, and garlic.
In a skillet over medium heat, add 1 tbps olive oil, carrots, and peppers.
Cook for around 5 minutes or until tender.
Once done, add shrimp and cook for an additonal 5 minutes or until pink.
Once done, set mixture aside in a bowl.
In the same skillet, add 2 tbsp olive oil and beaten eggs.
Cook until eggs start to scramble.
Push eggs to one side of skillet and add cauliflower rice with sauce mixture to the other side.
Mix everything together and continue to cook for 5 minutes or until rice starts to golden.
Once rice is golden, mix in shrimp mixture and peas.
Continue to cook for an additional few minutes.
Evenly divide shrimp fried rice into 6 servings to come as close as possible to the given macros.
