  • 2 cups sweet potatoes (diced)

  • 2 cups shrimp (peeled and thawed)

  • 2 tablespoons extra virgin olive oil

  • ½ cup onions (diced)

  • 2 cloves garlic (minced)

  • crushed red pepper

  • 3 cups kale leaves (chopped)

  • ground black pepper

  1. In a skillet, heat the olive oil over medium heat.

  2. Add the onions and crushed red pepper.

  3. Cook until the onions are soft.

  4. Add and mix in the garlic.

  5. Add and mix in the sweet potatoes and cook until soft.

  6. Add and mix in a few tablespoons of water.

  7. Add and mix in the shrimp and cook for around 4 minutes or until pink.

  8. Turn the heat to low.

  9. Add and mix in the kale and pepper.

  10. Cook until soft.

  11. Evenly divide recipe into 4 servings. Let cool and eat immediately or pack up 1 serving in order to come close to the given macros.
