Steak and Veggie Ingredients
2 teaspoons avocado oil
1 lb. sirloin steak tips
1 red bell pepper (sliced)
1 bunch asparagus (chopped)
1 red onion (sliced)
2 cups baby potatoes (halved)
1 summer squash or zucchini (sliced)
1 fresh rosemary
2 cloves garlic
Place vinegar, garlic, rosemary, dijon and blend in a high speed blender and blend.
Slowly add in olive oil until it is fully combined.
Steak and Veggie Directions
In a bowl, place steak tips with 1/2 of marinade and mix.
Pre-heat oven to 400º F.
Lightly oil a rimmed baking sheet.
In a bowl, toss potatoes and onions with 1 teaspoon of oil.
Place potatoes and onions on rimmed baking sheet and bake for 10 minutes.
Add and toss asparagus, peppers, zucchini, 1 teaspoon oil on rimmed baking sheet with onions and potatoes.
Continue baking for 10 - 15 minutes, making sure that the potatoes are cooked through.
Remove from oven.
Pre-heat broiler on high for at least 5 minutes.
Move the vegetables to each side of the sheet pan while also placing marinated steak in the center of the pan with any extra vinaigrette from bowl.
Place sheet pan on top rack below the broiler and broil for 5 minutes.
Flip sirloin tips to the other side and continue to broil for another 3 minutes, or until cooked through to your desire.
Remove from oven and let cool. Once cool, separate steak tips and veggies into 4 equal servings in order to come close to the given macros.
