  • 9 strawberries (halved)

  • 1 tbsp honey

  • 8 oz. rotisserie chicken (sliced)

  • 2 tbsp lemon juice

  • 1/4 cup olive oil

  • 2 tbsp white wine vinegar

  • 6 cups baby spinach

  • 1/2 cup red onion (diced)

  • 4 green onions (diced)

  • 4 oz. crumbled goat cheese

  • 1/4 cup sliced almonds

  1. In a blender, add olive oil, 4 strabwerries, white wine vinegar, lemon juice, and honey.

  2. Blend on high until smooth.

  3. In a bowl, add and combine together chicken, goat cheese, sliced almonds, green onions, red onions, baby spinach, and 5 strawberries.

  4. Toss strawberry dressing from blender on top of salad.

  5. Evenly divide salad into four servings to come as close as possible to the given macros.
