Street Corn Wraps
1 Lettuce Wraps

2 tbsp olive oil
3 cups corn kernals
2 green onions (diced)
2 tbsp cotija cheese (crumbled)
3 cups rotisserie chicken (shredded)
1/4 cup primal kitchen mayo
1/4 cup plain greek yogurt
1/2 tsp chili powder
1/2 tsp paprika
6 romaine lettuce wraps
3 tbsp cilantro
In a skillet over medium heat, add 1 tbsp of olive oil, corn, and green onion.
Cook for around 5 minutes or until slightly charred.
Once done, transfer corn into a bowl to cool.
Once cool, add cilantro and cotija cheese and set bowl aside.
In the skillet used previously, add 1 tbsp of olive oil and shredded chicken.
Cook only for a few minutes till chicken is just warm and set aside.
In a seperate bowl, add and mix mayo, greek yogurt, chili powder, and paprika until smooth.
Evenly divide corn mixture, chicken, and mayo mixture into 6 romaine lettuce wraps.
Eating 1 lettuce wrap will come as close as possible to the given macros.
