Preheat the oven to 400º F.
Line baking sheets with parchment paper.
Cut the sweet potatoes into paper-thin rounds.
Pile all the sweet potato rounds into a large bowl and pour the olive oil over the top.
Gently toss sweet potato chips until fully covered with oil.
Place chips on baking sheet in one even layer.
Sprinkle the chips lightly with salt.
Bake for around 25 minutes until crisp and golden around the edges.
Remove from the oven and cool for a few minutes on the baking sheets. If you find a few chips with soft centers, pop them back in the oven for a few minutes.
Evenly divide chips into 8 servings to come close to the given macros.
