Sweet Potato Hash

1 medium-sized red onion (diced)
1 cup kale (chopped)
1 tbsp olive oil
1 medium-sized sweet potatoes (diced)
1 each red, green and yellow pepper (diced)
1 tbsp chili powder
2 tsp fennel seeds
2 cloves garlic (minced)
2 tsp smoked paprika
1 lb ground chicken or turkey
2 tsp dijon mustard
2 tsp onion powder
Preheat olive oil in a skillet over med-high heat.
Add sweet potatoes and half of chili powder.
Cook for around 15 minutes until soft.
In a bowl, mix together ingredients for sausage.
Add sausage mixture to the skillet once sweet potatoes are soft.
Cook and mix for around 5 minutes or until sausage is cooked and broken up.
Add in bell peppers, onions, and remaining chili powder.
Cook for another five minutes and add in kale throughout that time.
Evenly divide recipe into 4 servings. Let cool and eat immediately or pack up 1 serving to come close tot he given macros.
