  • 1/2 tbsp. ghee

  • 1/2 small red onion (chopped)

  • 1/2 red bell pepper (chopped)

  • 1 medium sweet potato (cubed)

  • 7 whole eggs

  • avocado, sliced

  • 1/2 lb. turkey sausage

  • 3–4 cups spinach leaves

  1. Preheat oven to 400º F.

  2. Grease a 9×9-inch glass dish.

  3. In a medium pan, heat the ghee on medium-high heat.

  4. Once hot, add sweet potato. Cover and let cook for about 10-15 minutes or until sweet potatoes are soft.

  5. In another pan on medium-high heat, begin to brown turkey sausage.

  6. Add the peppers and onion to the soft sweet potatoes and continue to cook for 3-4 minutes.

  7. Once peppers and onions are soft, add spinach and cook for 1-2 minutes or until spinach is wilted.

  8. Add and stir in the cooked turkey sausage.

  9. Remove pan from heat.

  10. In a separate bowl, mix the eggs.

  11. In the 9×9 baking dish, add the sweet potato, turkey sausage mixture, then pour mixed eggs over the top. Make sure to submerge all of the ingredients so that they are covered with the eggs.

  12. Bake in the oven for 16-18 minutes or until center is set.

  13. Evenly cut and divide casserole into 4 servings to come close to given macros.
