  • 6 eggs

  • 2 cup shredded cheese

  • 1 tbsp. extra-virgin olive oil

  • black pepper

  • 2 tbsp. taco seasoning

  • 1/2 yellow onion (diced)

  • 2 lb. ground beef

  1. Preheat oven to 350° F.

  2. Heat skillet and add onion.

  3. Cook until soft.

  4. Add and mix in ground beef with the onions.

  5. Cook the ground beef while breaking it up throughout until no pink remains.

  6. Add and mix in taco seasoning and black pepper.

  7. Remove from heat and set aside.

  8. In a bowl, add and mix eggs.

  9. Add and mix in meat mixture to the eggs.

  10. Pour mixture into a baking dish.

  11. Evenly divide cheese on top of mixture.

  12. Bake for around 20-25 minutes.

  13. Evenly cut casserole into 10 servings or squares. Let cool and eat immediately or pack up 1/10 of recipe to come close to the given macros.
