  • 1 tbsp olive oil

  • 1 lb ground beef

  • 1 red bell pepper (diced)

  • 2 garlic cloves (minced)

  • 1 tbsp chili powder

  • 1 tbsp ground cumin

  • 1/4 cup green onions (diced)

  • 15 oz. diced can tomatoes

  • 1 cup black beans

  • 1/2 cup cheddar cheese (shredded)

  • 1/2 cup moterey jack cheese (shredded)

  1. In a skillet over medium heat, add olive oil, bell peppers, garlic, and green onions.

  2. Cook for around 4-6 minutes or until soft.

  3. Mix in chili pepper and cumin.

  4. In the same skillet, add and break up ground beef while cooking for an additional 6 minutes or until brown.

  5. Mix in tomatoes and black beans while continuing to cook for a couple minutes.

  6. Add all cheese on top and cover skillet with a lid for a few minutes or until cheese is melted. 

  7. Evenly divide recipe into 8 servings to come as close as possible to the given macros.
