1 tbsp olive oil
1 lb ground beef
1 red bell pepper (diced)
2 garlic cloves (minced)
1 tbsp chili powder
1 tbsp ground cumin
1/4 cup green onions (diced)
15 oz. diced can tomatoes
1 cup black beans
1/2 cup cheddar cheese (shredded)
1/2 cup moterey jack cheese (shredded)
In a skillet over medium heat, add olive oil, bell peppers, garlic, and green onions.
Cook for around 4-6 minutes or until soft.
Mix in chili pepper and cumin.
In the same skillet, add and break up ground beef while cooking for an additional 6 minutes or until brown.
Mix in tomatoes and black beans while continuing to cook for a couple minutes.
Add all cheese on top and cover skillet with a lid for a few minutes or until cheese is melted.
Evenly divide recipe into 8 servings to come as close as possible to the given macros.
