Tater Egg Muffins

12 whole eggs
4 egg whites (no yolks)
3 tbsp almond milk
36 tater tots (thawed)
Preheat oven to 425º F.
In a bowl, add and mix 12 whole eggs, 4 egg whites, and almond milk.
In a non-stick 12 slot muffin pan, place 3 tater tots on the bottom of each slot.
Mash tator tots together to form a crust on the bottom of each slot.
Bake for around 8-10 minutes and remove from oven.
Set oven to 350º F.
Evenly divide egg mixture into each slot.
Place back in oven for around 15-20 minutes or until eggs are completely cooked through.
