  • 12 whole eggs

  • 4 egg whites (no yolks)

  • 3 tbsp almond milk

  • 36 tater tots (thawed)

  1. Preheat oven to 425º F.

  2. In a bowl, add and mix 12 whole eggs, 4 egg whites, and almond milk.

  3. In a non-stick 12 slot muffin pan, place 3 tater tots on the bottom of each slot.

  4. Mash tator tots together to form a crust on the bottom of each slot.

  5. Bake for around 8-10 minutes and remove from oven.

  6. Set oven to 350º F.

  7. Evenly divide egg mixture into each slot.

  8. Place back in oven for around 15-20 minutes or until eggs are completely cooked through.
