  • 6 cloves garlic (minced)

  • 1 tbsp chili powder

  • 1 1/2 cups chicken broth

  • 2 1/2 tsp ground cumin

  • 1 tsp oregano

  • 1 1/2 lb boneless chicken breasts

  • 1 medium onion (diced)

  • 1 medium bell pepper (diced)

  • 1 14 oz can coconut milk

  1. Add onion, garlic, peppers, and spices to the bottom of a slow cooker.

  2. Add chicken on top without mixing, then add broth.

  3. Cook on low for around 6 hours or until chicken is cooked through and not pink.

  4. Remove chicken from slow cooker and shred with forks or a hand mixer.

  5. Once shredded, add and mix chicken back into slow-cooker.

  6. Add and mix in in coconut milk.

  7. Cook on high for around 20 minutes or until your desired consistency.

  8. Evenly divide recipe into 5 servings or bowls of soup to come as close as possible to the given macros.
