Zucchini Shrimp Scampi

1 tsp lemon zest
3 garlic cloves (minced)
1/4 cup chicken broth
3 tbsp butter
3 tbsp olive oil
1 lb raw shrimp
2 large zucchini
Start by spiralizing the zucchini.
Once spiralized, place zucchini in a pan with oil and cook for around 5-7 minutes.
Once done, set aside.
Mixing 1 tbsp oil and 1 clove of garlic in a bowl.
Place shrimp in bowl and let mixture soak into shrimp.
In a pan, add 2 tbsp olive oil.
Add shrimp in pan and cook for around 3 minutes per side.
Once done, place aside.
Add the remaining garlic, lemon zest, and chicken broth to pan.
Cook for around 2-5 minutes.
Add butter and cook for an additional 2-5 minutes or until sauce starts to thicken.
Add shrimp back into pan and cook for another 3 minutes each side while mixing sauce onto shrimp.
Add zucchini into shrimp mixture and mix well.
Evenly divide recipe into 4 servings to come as close as possible to the given macros.
